Quinoa Salad with Blueberries

Ingredients

  • 200 g wild blueberries (frozen)
  • 2 tbsp raspberry vinegar (alternatively red wine vinegar)
  • ½ tsp pink pepper berries (shredded)
  • 80 g quinoa
  • salt
  • 1 zucchini
  • 80 g full-fat cheese
  • 200 g cottage cheese
  • a few mint leaves
  • baguette

Preparation

  1. Mix blueberries with vinegar and pink pepper berries and let thaw.
  2. Cook quinoa in salted water according to package instructions. Let it cool down.
  3. Cut zucchini into strips. Dice cheese.
  4. Mix quinoa with zucchini, cheese, and cottage cheese. Mix in blueberries and mint loosely. Refrigerate.
  5. Serve with baguette.
