Canadian ice wine, a dessert wine known for its intense taste and rich bouquet, is of course particularly well-known. It is made from grapes that stick to the vine after the fall harvest. When temperatures drop to -8°C (or less), the frozen grapes are picked by hand and immediately pressed to produce a rich, golden yellow liquid that has a high concentration of natural sugar and acid.
