Canadian Bison

a very special treat

After bison were almost eradicated in the early 20th century, stocks have now recovered, and Canadian bison meat is now appreciated as a nutritious delicacy by gourmets all over the world. The animals are raised in harmony with nature, as they are kept free-range in their original home, the Canadian prairie. Canadian bison meat is a purely natural and extremely lean meat that tastes slightly sweet yet full-bodied — some say “it tastes like beef should originally taste.”

It is a bit surprising that the meat of bison, which weighs up to 1.2 tons and reaches 50 km/h, is particularly characterized by its low fat and cholesterol content and is also rich in protein, iron, selenium, B vitamins and zinc. But rearing on the Canadian prairie, where bison naturally feeds on grass and grains and finds up to 180 different herbs and minerals, makes the meat a particularly nutritious and tender alternative to conventional red meat.

Guardians of the Grasslands

Bison are considered a key species. The way they graze and interact with their pastures contributes to healthy grasslands. Since bison are constantly on the move and have a preference for grasses, they leave a habitat for other species. Their grazing and interaction with the soil are important to maintain and increase the number of species on the areas they graze.

In harmony with nature

Bison are ideally adapted to Canada's northern climate. Their extra coat on their shoulders and the additional development of the front half of their bodies enable them to face the wind and storms of winter. They are also able to push their way through the snow cover of the prairies with their big head and muscles to find the grass underneath to graze. They also need less food during the winter months because their metabolism slows down. You won't find a bison migrating south for the winter!

Not all bison are the same as buffalo

Bison meat is not to be confused with buffalo meat. Although the American bison is often referred to as buffalo, the real buffalo is not native to America. The cape buffalo and water buffalo are native to Africa and Asia, while the bison is found in North America and Europe. Water buffaloes are domesticated, like cattle; their meat often comes from Italy, India or the USA. Bison meat, on the other hand, is considered game meat because bison is raised in their natural habitat and not domesticated.
