Fruity Blueberry Jam

Tip:

Instead of Gelfix, you can also use gelling sugar 2:1, then you don't need any additional sugar. If you don't get any fresh cultivated blueberries, you can also use frozen fruit.

6 glasses (300 ml each)

Ingredients

  • 1 kg cultivated blueberries
  • 500 g sugar
  • 25 g Gelfix 2:1

(granulated fruit pectin)

  • ½ tbsp. ground ginger
  • 1 tsp grated orange peel

Preparation

  1. Place the whole blueberries in a pot and mash them roughly with a potato masher. Depending on the juice content of the fruit, add ½ cup of water.
  2. Mix sugar and gelfix, add to the blueberry mixture and mix well. Bring everything to a boil, cook until bubbly, about 3 - 4 minutes, stirring constantly. If a lot of foam forms, remove it with a skimmer.
  3. Finally, stir in the spices, don't cook anymore! Pour the mixture into hot-washed twist-off glasses or small mason jars.
