Wild Rice Summer Salad

6-8 servings

Ingredients

  • 200 g wild rice
  • 4 hard boiled eggs, cut into pieces
  • 115 g celery, cut into thin strips
  • 50 g green bell pepper, diced
  • 50 g onions, diced
  • 115 g tomatoes, roughly diced
  • 100 g snake cucumber, roughly diced
  • 12 tbsp mayonnaise
  • 2 tsp Dijon mustard
  • salt & pepper to taste
  • lettuce leaves

Preparation

Wild Rice

Place the rice in boiling salted water and let it boil until the rice grains crack open (approx. 60 minutes). Drain and chill the wild rice, add a little oil and let it dry in a slightly preheated oven.

Salad

Mix the cooked wild rice with the eggs, celery, green pepper, onion, tomatoes and cucumber. Season the mayonnaise with salt, pepper and mustard and fold gently into the rice mixture. Serve the wild rice salad on crunchy lettuce leaves.

Tip

Mix wild rice into any salad or garnish green salads with cold wild rice grains.
