Pan-sautéed Halibut

Ingredients

  • 4 halibut fillets with skin
  • salt
  • pepper
  • 3 tbsp canola oil
  • 1 zucchini, diced
  • 20 cherry tomatoes, cut in half
  • 20 sugar snap peas, cut in half
  • 1 spring onion, sliced
  • 500 ml vegetable broth
  • 10 basil leaves

Preparation

  1. Preheat the oven to 180°C. Season the fish fillets with pepper and salt on both sides.
  2. Heat the canola oil in a large, non-stick, ovenproof pan and fry the fillets on the skinless side first.
  3. After a few minutes, turn the fish over and put the pan in the oven for 15 minutes. Meanwhile, prepare the vegetables.
  4. Remove the pan from the oven, place each of the 4 fish fillets in a deep soup plate and keep warm.
  5. Put the pan back on the stove over medium heat. Now sauté the vegetables for a few minutes, pour in vegetable broth and bring to a boil. Let the broth boil for 1 - 2 minutes and then spread it around the fish fillets.
  6. Garnish with basil and serve.
