Home-made Pea Soup

These Canadian ingredients are available at your local supermarket.

Ingredients

  • 1 kg dried peas (yellow split peas)
  • 100 g carrots
  • 100 g celery
  • 100 g onions
  • 300 g salt pork
  • 50 g lard
  • 1 bouquet garni
  • (bunch of mixed herbs)
  • 1 bunch of parsley, roughly chopped
  • 1 bay leaf
  • salt
  • peppers

Preparation

  1. Soak the peas in cold water for 12 hours.
  2. Cut carrots, celery, onions and pork into cubes and fry briefly in lard in a large pot.
  3. Add soaked peas, bouquet garni, parsley, bay leaf, salt and pepper to the vegetables. Cover with cold water, bring to a boil and simmer for about two hours.
  4. Serve the soup garnished with thyme.
