Baked Char in Lemon-Thyme Crust

Ingredients

  • 900 g char
  • 1 tsp salt (2 x 1⁄2 tsp)
  • 1 tsp ground black pepper (2 x 1⁄2 tsp)
  • 60 g butter
  • 1 small onion, finely chopped
  • 1/2 tsp dried thyme
  • 1 tsp lemon juice
  • 125 g breadcrumbs
  • lemon slices and fresh
  • chopped parsley

Preparation

Preheat the oven to 190° C. Wash fish and pat dry with a paper towel. Then place the fish on greased parchment or baking paper and season the char with 1⁄2 teaspoon of salt and 1⁄2 teaspoon of pepper. Put half of the butter in the pan and sauté the onion for about 2 minutes.

Add thyme, lemon juice, salt, pepper, bread crumbs and the rest of the butter, let the butter melt slowly and mix well. Then spread the mixture over the fish and bake in the oven for 12 to 15 minutes.

Then decorate with lemon slices and chopped parsley and serve immediately.
