Cranberry Apple Bran Muffins

Ingredients

  • 75 g cranberries, dried, roughly chopped
  • 130 g wheat flour (type 550)
  • 75 g wheat flour
  • 30 g bran flakes
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp allspice
  • ½ tsp nutmeg, grated
  • 50 g pecans or walnuts, roughly chopped
  • 1 apple, peeled and grated
  • 225 ml milk
  • 6 tbsp honey
  • 1 tbsp vegetable oil
  • 1 egg

Preparation

  1. Preheat the oven to 160° C
  2. Mix all dry ingredients in a large bowl and add the apple.
  3. In a second bowl, mix the milk and honey well, add the oil and the egg and mix thoroughly.
  4. Form a well in the dry mass and pour the liquid into it. Mix all ingredients together and knead to a smooth dough.
  5. Grease 6 muffin tins (or use paper cases) and fill ¾ of each with batter. Bake in the oven for about 15 — 20 minutes.
